
How fun are these Coconut Mermaid Bowls? I made these for my Brunch Club and they were so simple, refreshing, and delicious! The Blue Spirulina Powder is a must! Not only does it give the smoothie the perfect ocean color, it has a ton of health benefits! It is a superfood that helps with immunity, digestion, and increases your energy levels. Coconut Mermaid Bowl
Equipment
- 1 Mermaid Tail Silicone Mold linked below
- High Speed Blender
Ingredients
- 2 frozen banannas
- 1 mango peeled and diced
- 3 tbsp coconut yogurt
- 2 tbsp coconut water
- 1 tbsp honey
- 1 tsp BLUE spirulina powder
Toppings
- 1/2 cup granola
- 1 tbsp honey pearls optional – linked below
- frozen yogurt mermaid tails and sea shells optional
- frozen berries
Mermaid Tails
- 1 cup coconut yogurt
- 1 tsp beet root powder or pink food coloring
- 1/4 tsp blue spirulina powder
- mermaid silicone molds linked below
- sea shell silicone molds (optional) linked below
Instructions
Mermaid Tails
- Add 1/2 cup of the coconut yogurt to 2 small bowls. Mix the beet root powder in one and the blue spirulina powder in the other. Add more beet root powder or blue spirulina powder until you get the color you want.
- Place the silicone molds on a cooking sheet. Using a small spoon, add the blue yogurt in the body of the tails. Then add the pink yogurt at the top of the tails. Using a tooth pick, mix the yogurts together making swirls. Last, using the dull edge of a butter knife, scrape all the excess yogurt off.
- Freeze for 6 hours or overnight.
Smoothie Bowl
- Using a high speed blender, pulse together the coconut water, coconut yogurt, mango, banana, and honey until smooth. It is a thick smoothie so you will need to push down the frozen bananas every couple seconds. Add more coconut water if necessary. Once the smoothie starts to form, add the blue spirulina powder little by little until you get the perfect ocean color.
- Pour into small ramekins or bowls. Garnish with granola, honey pearls, frozen berries, and mermaid tails. Serve immediately.
Notes
Keep in mind, you will need to make the mermaid tails the day before so they can freeze.
