Mini Spiced Baked Brie

Ingredients
  

  • 1 sheet puff pastry Thawed according to package
  • 8 individual brie bites
  • 1/2 cup pumpkin or apple butter
  • 1/2 cup crushed pecans
  • 1/4 cup sugar
  • 8 graham crackers optional

Instructions
 

  • Preheat the oven to 400 degrees F and line a baking sheet with parchment paper.
  • Roll out the puff pastry and cut into 8 squares. Place one brie bite on each square. Next add a tsp of pumpkin/apple butter and pecans on top. Fold in all the edges toward the middle to make sure no brie is showing. Turn over so the folded side is down and place on the parchment paper.
  • Make the egg wash. Whisk together the egg and 1 tbsp water and set aside. Brush on top of each and sprinkle the top with sugar.
  • Bake for 15-20 minutes or until lightly browned.
  • Let cool slightly and top with additional pumpkin/apple butter and crushed pecans. Serve with graham crackers or by itself.

Sweet Pistachio Turn Over

Ingredients
  

  • 1 sheet puff pastry thawed according to package
  • 1/2 cup Pistachio spread link below
  • 1/2 cup crushed pistachios shelled
  • 1/4 cup sugar
  • 1 egg
  • 4 tbsp raw honey

Instructions
 

  • Preheat the oven to 400 degrees F and line a baking sheet with parchment paper.
  • Roll out the puff pastry and cut into 8 squares. With a small knife, spread the pistachio spread on each square. Next add a tsp of crushed pistachios on top. Fold over to make a triangle. Using a fork, press down on the edges to enclose. Place on the parchment paper.
  • Make the egg wash. Whisk together the egg and 1 tbsp water. Brush on top of each and sprinkle with sugar.
  • Bake for 15 minutes or until lightly browned. Let cool slightly and drizzle with raw honey.

Pistachio is the New Nutella

This pistachio spread is sweet like Nutella but has another dimension of complexity in my opinion. It is addicting and great in a turn over or even just on toast!
