Grilled Street Corn Salad with Avocado “Mayo” from Half Baked Harvest

Half Baked Harvest does it again, this recipe is incredible! I love the avocado “mayo”, it makes the dish vibrant with a healthy twist. My mother in law made this one night and I could not stop eating it. It is so addicting that I made it again a few days later. You will not regret trying this recipe!

Serve as an appetizer with thick tortilla chips and jalapeno margaritas.


This recipe is simple and took me less than 30 minutes to make. The feta is optional but it is a great addition. The jalapeno adds the right amount of spice and is balanced perfectly next to the avocado mayo.
