Lemon Herb Roasted Fingerling Potatoes

Sage . Lemon . Parsley . Sea Salt .

These lemon herb potatoes need to be on your summer menu. Pair with chicken salad, hamburgers, or serve just as an appetizer. The sage pairs nicely with the lemon zest. The fresh parsley added after cooking puts a fresh spin on it that you will love!

Lemon Herb Roasted Fingerling Potatoes

  • 3 cups sliced fingerling potatoes sliced vertically
  • 1 lemon zest & juice from 1/2
  • 2 tbsp olive oil
  • 1 tbsp vegetable oil
  • 1 tbsp fresh sage chopped
  • 1 tbsp fresh parsley chopped
  • 1 tsp sea salt
  • 1 tbsp microgreens optional


  • Preheat oven to 450 degrees. In a medium bowl, toss together the sliced potatoes, olive oil, vegetable oil, sea salt, lemon zest, juice from 1/2 a lemon, and sage.
  • Place a silicon mat (or pachment paper) on a large baking sheet. Add the potatoes and cook for 20-25 minutes, making sure to toss halfway through. Until golden brown and crispy.
  • Remove from the oven and toss with parsley and a pinch of salt. Garnish with microgreens and serve immediately.
