Honey Dill Salmon with Sweet Turnip Purée

This salmon is to die for. It is packed with flavor and so simple to make. The ghee adds a complexity to the fish and makes it moist and buttery. Dill and lemon paired with salmon are the obvious choice but adding the honey and ghee elevates the dish. The turnip purée is fantastic and creates a very balanced dish when served with the salmon. Honey Dill Salmon with Sweet Turnip Purée

Ingredients
  

  • 2 4-6 ounce fillets salmon
  • 2 tsp ghee
  • 1 tbsp fresh dill chopped
  • 1 tsp raw honey
  • 1 lemon 1/2 sliced & 1/2 juiced
  • salt & fresh ground pepper to taste

Sweet Turnip Purée

  • 1 bunch baby turnips (about 1 1/2 cups) trimmed and cut into quarters
  • 1 can coconut milk full fat
  • 1 tsp raw honey
  • 1 tsp fresh dill chopped
  • salt & fresh ground pepper to taste

Instructions
 

  • Preheat the oven to 375 degrees. Prepare the salmon.
  • Dry the salmon fillets with a paper towel. Squeeze the juice of half the lemon on the fillets.
  • Sprinkle salt and fresh ground pepper on each fillet. Add the raw honey, fresh dill, ghee, and lemon slices on each fillet.
  • Bake at 375 degrees for 14 minutes. Serve on top of turnip purée.

Sweet Turnip Purée

  • Add the turnips and the coconut milk to a medium sauce pan. Bring to a boil then simmer for 18-20 minutes stirring often.
  • Drain the turnips while making sure to reserve 1/3 cup of the coconut milk.
  • Add the turnips and the reserved coconut milk to a blender and blend until smooth. Next, add the honey, dill, salt, and fresh ground pepper. Pulse until well mixed. Serve immediately.

Notes

Start the turnips while the oven is preheating.  That way, you can blend the turnips while the salmon is cooking and it will be ready at the same time.
