Asparagus, Goat Cheese, & Red Onion Tart

I might be a little obsessed with puff pastry. It is just too easy and too delicious not to use. Puff pastry is the easiest way to make a tart in my opinion. Asparagus tarts are very trendy right now and I can see why. It turns out beautiful and so tasty! It is the perfect side dish or appetizer.

Asparagus, Goat Cheese, & Red Onion Tart

  • 1 sheet puff pastry
  • 1 bunch asparagus trimmed
  • 2 tbsp olive oil
  • 1 tbsp fresh thyme leaves leaves removed
  • 3 ounces goat cheese crumbled
  • 1/4 red onion thinly sliced
  • salt & fresh ground pepper to taste
  • 1 tbsp flour


  • Preheat oven to 400 degrees and thaw puff pastry according to package. Sprinkle flour on a clean surface and roll out the puff pastry. It should end up being around 10 X 13 inches.
  • Using a pastry brush, spread 1 tbsp of the olive oil evenly. (Making sure to get the edges) Sprinkle with the fresh thyme, salt, & gound pepper.
  • Prick the puff pastry all over with a fork. Then add the 3 ounces of goat cheese evenly.
  • In a medium bowl, toss together the remaining 1 tbsp of the olive oil, asparagus, salt, and pepper. Then arrange asparagus in an even layer on top of the goat cheese.
  • Sprinkle red onion over asparagus. Cook for 15-17 minutes at 400 degress. Serve immediately.


Wait to cut until right before serving. The presentation is too beautiful for your guests not to see!  While cutting, hold the asparagus in place.
