Green Bean Amandine

  • 1 pound green beans trimmed
  • 1 tbsp olive oil
  • 1/2 medium lemon zest & juice
  • 1/4 cup sliced roasted almonds
  • salt & fresh ground pepper to taste


  • Boil a large pot of salted water to blanch the green beans. Prepare an ice bath. Once the water is at a rapid boil, add the green beans and boil for 2 minutes. Drain and place in the ice bath.
  • Dry the green beans completely in a towel. Add the olive oil to a large skillet and heat on medium heat. Add the green beans, lemon zest, lemon juice, salt, and pepper. Sauté for 2-3 minutes until well coated and mixed.
  • Remove from heat and pour into a serving dish. Simply pour the almonds over the top and voilà!
