Golden Apple & Fennel Chicken Salad

Protein packed and loaded with fresh produce! I made this chicken salad with golden apples, fennel, and butter lettuce from my variety bag with LocalFarmOK. It is by far the freshest produce I can get my hands on in Oklahoma.

I love using a sheep or goat’s yogurt in chicken salad. It makes it creamier and offers higher protein, more healthy fats, and vitamin C. Greek yogurt or mayonnaise would work great in this recipe as well if you aren’t into the whole alternative dairy thing. You do you!

Golden Apple & Fennel Chicken Salad

Servings 2

Ingredients
  

  • 1 pound roasted chicken breast shredded
  • 1/2 medium golden apple diced
  • 1/2 fennel bulb diced
  • 1 tbsp fennel fronds (fennel leaves) chopped
  • 3/4 cup plain sheep's yogurt substitute greek yogurt, goat yogurt, or mayonnaise
  • 1/2 large lemon juiced
  • 1 tbsp shallot minced
  • 1/3 cup raw sliced almonds
  • salt & fresh ground pepper to taste
  • 1 head butter lettuce

Instructions
 

  • Add all ingredients into a bowl and mix well. Serve with butter lettuce, bread, crackers, or naan bread. If making ahead of time – add apples and almonds right before serving.

Best way to shred roasted chicken is in a standing mixer fitted with the paddle attachment.
