Baba Ganoush from Love & Lemons

I like to think that baba ganoush is a distant relative to Hummus. Don’t get me wrong, I love a creamy hummus but baba ganoush takes snacking to the next level. I am talking about using any and every veggie, naan slice, cheese stick, or even a salami link as a vessel to get this yummy dip in my mouth. I will use any excuse to eat this eggplant wonderfulness. So go buy an eggplant and get cooking!

Taste: Savory with a little kick from the garlic and red pepper

Time: Cook time is 60 minutes

Trouble: Little to no trouble!

TIPS:

  • It is okay not to get all the seeds out of the eggplant after roasting. A few left are fine.
  • Make sure to buy a good quality tahini – this can change the taste drastically.
  • Add any spice you would like – go crazy!
  • I prefer to use Naan bread instead of pita. I like to warm it up in the oven before serving.
