I make Parmigiano-Reggiano Crisps often but this recipe has such an unique twist with the goat cheese mousse inside a cup of Parmigiano.

Tip: Make the crisps as thin as possible to prevent them from becoming chewy.

Make the mousse ahead of time and refrigerate.
