Easy Spinach Pesto

I can eat this pesto with just about anything. I got the recipe from my friend meg who makes a delicious pesto stuffed mushroom, which I crave constantly. Spinach Pesto is vibrant, earthy, and not to mention it is a great way to get your veggies in! I served the pesto with a simple spaghetti noodle, seared scallops, and fresh parm on top.

Spinach Pesto

Servings 4 servings


  • 2 1/2 cups Spinach
  • 1 cup Fresh Basil
  • 1/3 cup Parmesan grated
  • 1/4 cup Pine Nuts
  • 1/4 cup Olive Oil
  • 1 Garlic Clove
  • Salt & Pepper to taste
  • 1 tbsp Lemon Juice


  • Pour all ingredients into a food processor. Blend until mixed. I like it coarse instead of smooth.


I have adapted this pesto recipe from my friend Meg who is an amazing vegan cook.   She makes this pesto with walnuts instead of pine nuts, water instead of oil, and nutritional yeast instead of parm and it is incredible!
