  • 1 Puff Pastry Sheet thawed according to package
  • 1 tbsp olive oil
  • 1 yellow onion sliced thin
  • 8 ounce goat cheese crumbled
  • 3/4 pound fresh figs quartered
  • 1 tbsp raw honey
  • salt & pepper to taste
  • 1 tbsp fresh thyme chopped

  • Preheat oven to 400F. Place parchment paper on a tart pan or sheet pan.
  • Roll out the puff pastry and place in tart pan or sheet pan. Lightly brush with olive oil and sprinkle with salt and pepper. Place in oven and cook for 7 minutes.
  • While the puff pastry is cooking, start cooking the onions. Using a skillet on medium heat, drizzle the olive oil and cook the onions until lightly caramelized. (10-15 minutes)
  • Take the tart pan out of the oven and sprinkle with the caramelized onion, goat cheese, figs, and fresh thyme. Drizzle of honey.
  • Cook for another 20 minutes or until golden brown on the edges. Serve warm.

I have also made this tart and placed fresh arugula on top and drizzled with balsamic glaze and it was delicious!
