I love trying out new brunch recipes and these Rhubarb Pop Tarts from Wood and Spoon are just too cute! The rhubarb jam is the perfect mix between tart and sweet and who doesn’t love a good old fashioned pop tart??
- This is a great recipe for a party because you can have everything prepped the day before since the assembled pop tarts need to freeze for at least 2 hours or overnight.
- Make sure to read the whole recipe before you plan to start baking. This is definitely more of a lazy Sunday baking recipe than a quick breakfast.
- I had to add a few more tablespoons of water to the dough to get the right consistency. If it is not staying together, you need to add more water.
- It doesn’t have to look perfect to taste perfect. Each pop tart came out looking different and my daughter wanting to help decorate the tarts didn’t help the appearance. But we had an absolute blast together and an even better time eating them!
TASTE: Perfect mix of tart and sweet!
TIME: Prep time is about 60 minutes and bake time is 25-30 minutes. But keep in mind the dough needs to chill in the fridge for 1 hour before assembling and the assembled pop tarts need to be in the freezer for at least 2 hours.
TROUBLE: I had a little trouble getting the dough together but it was so worth it! These are flaky and delicious!
