- I used mint as the fresh herb and it complimented the feta cheese very well!
- Never used farro before? Farro is a whole grain and has a a variety of health benefits. It is a great substitute for rice if you are looking for more fiber, protein, and antioxidants.
- Not a feta cheese fan? Goat cheese would be great as well!
- The lemon dressing is incredible, save the extra and use on other salads!

TIME: Total prep time is 15 minutes. Total cook time is 2 hours. (Totally worth it when you taste these slow roasted tomatoes)
