Cacio e Pepe with Arugula and Lemon by Half Baked Harvest

Lemon, Arugula, and Parmesan… three of my favorite things all in one dish!  This Cacio e Pepe with Arugula and Lemon by Half Baked Harvest is creamy, peppery, and cheesy.  Sign me up for any meal with less than 10 ingredients and not to mention it took me less than 25 minutes to make!

TIPS:

  • Make sure to reserve more the 3/4 cup of pasta water before draining. I add a little bit at a time until I get the consistency I want for the sauce.
  • Bucatini noodles are thicker than regular spaghetti noodles.  You can certainly use regular spaghetti or angel hair but the bucatini adds another depth to the dish in my opinion.
