Need an easy and healthy weeknight dinner? I love making these Salmon Tacos by Williams Sonoma when I am craving mexican food but still want to eat healthy. This recipe is found online here or in one of my favorite cookbooks from Williams-Sonoma Healthy in a Hurry, by Karen Ansel and Charity Ferreira.
- I LOVE the mango salsa in this recipe but left it out here because I was craving gaucamole this week so bad! That is why I love this recipe, it is great with the mango salsa, qaucamole, or corn salsa.
- If you are in a hurry you can bake the salmon. I usually bake it at 400 degrees for 10-13 minutes. This way you can prep the salsa and radishes while the salmon is baking.
- I also love to add just a little manchego cheese or sharp white cheddar to the warm tortilla before adding the salmon.
