This Rainbow Kale Salad with Carrot Ginger Dressing by Love & Lemons is the perfect salad to serve for dinner or meal prep for lunches. I made enough to have for lunch the whole week and never got tired of it. The pepitas (pumpkin seeds), dried cranberries, and roasted chickpeas made this salad so satisfying! I love getting my veggies in during lunch so I can indulge for dinner and maybe even have that Ben & Jerry’s pint of ice cream I’ve been craving.
- After you blend the Carrot Ginger Dressing, add more olive oil if you prefer a lighter dressing.
- Cutting all the vegetables takes the majority of the prep time so cut the vegetables however is easiest for you. This salad is going to be beautiful no matter what!
- If you are making this for a meal prep, buy more veggies. I made seperate bowls to store each vegetable and topping and just threw it all together every morning. This made my lunches exciting and easy!

TROUBLE: Dressing is very simple to make! Love anything I can throw in a blender!
