I am obsessed with all of Love & Lemon’s recipes. This Simple Spicy Green Breakfast Taco is to die for! I love making breakfast tacos in the mornings but was looking for ways to make it healthier but still taste amazing. Making Love & Lemon’s Roasted Tomatillo Salsa takes additional time but omg it was worth it. I made enough to use in other recipes but also who doesn’t love an afternoon snack of chips and salsa!
What I love about this recipe:
- The Microgreens: Microgreens are loaded with antioxidants, vitamins, and minerals.
- The Spinach: I mean do I really need to tell you the health benefits to spinach?
- The Tomatillos: Good source of fiber and potassium
- The Avocados: Great source of monounsaturated fatty acids aka the healthy fat you need in your diet!
You can make this taco even healthier by using sprouted tortillas.
- TASTE: Everything you want out of a breakfast taco but still healthy!
- TIME: Total time for the taco is just 15 minutes. Total time for the tomatillo salsa is about 20 minutes, worth every minute!
- TROUBLE: Very simple to make, including the salsa!
